Traditionally, baking powder was made from sodium bicarbonate (NaHCO3) & cream of tartar (CoT) like ours is. However as CoT is expensive, food manufacturers researched an alternative and soon aluminium compounds started replacing CoT in commercial baking powder. You may detect a slightly metallic flavour if you use an aluminium based baking powder so why not just use the good old original recipe.
